hello fellow fromagette fans! lil’ sriracha missed out on one important part and photo, of the parm splitting process… getting it open!
I have to say, this is one of my favorite things to do, as a cheese-girl, it is really fun and satisfying to dig those italian daggers into the parmigiano to strategically release all of the goodness and Mmmm that has been perfecting for 2 years.
it’s a magical thing.
it gives people pause when they see it. there is actually a definitive line you could draw between people. 1.) people who like nectarines vs. people who like peaches. that’s not part of this conversation, but lil’ sriracha knows exactly what i’m talking about.
2.)there are also, those people who will glance upon “the splitting of the parm,” and they are mesmerized, and driven to say something about it. we LOVE that. if you see someone wrestling an 80 lb wheel of cheese or even a small batch of Goat’s Leap Eclipse, and it gives you pause, say something!! your fellow cheese-monger will thank you. (and probably give you a taste!!)
